It was the time to follow vegetarian diets (without animal protein consumption) and vegan (which also excludes other items of animal origin, such as milk and egg) was a hindrance to going out for an out-of-home meal.
Nowadays, many sophisticated establishments invest in specific menus to cater to this audience, which has greatly increased in recent years. Only Veg Map, where vegetarians and vegans register to "register their adherence to the diet," already has 23,200 supporters, but this number is likely to be much higher.
1. Kajitsu, New York
The restaurant, located in the Murray Hill neighborhood of Midtown Manhattan, serves vegetarian dishes based on the Shojin (Buddhist) cuisine. Each ingredient is prepared to emphasize its flavor. Customers can choose between two styles of tasting menu: four or eight times. One of the main dishes is the "fu", a kind of Japanese bread made from gluten and rice flour.
2. Nix, New York
Chef John Fraser, the same as the Narcissa restaurant (at The Standard Hotel) and the award-winning Dovetail, opened the doors of its vegetarian establishment in 2016. There are dishes such as shitake cacio e pepe (in typical Italian cheese sauce and Pepper), served with green beans and creamy polenta.
3. Pollen Street Social, London
The restaurant is non-vegetarian, but offers à la carte and attractive tasting menus. The eight-stroke option, when served with wine, comes out at 182 pounds. Among the dishes are unusual combinations, such as that mixed grilled broccoli with lemon puree, toasted almonds and seaweed.
4. The Ritz Restaurant, London
The classic restaurant is situated inside the hotel, which is very close to Green Park and Mayfair. In addition to the standard menu - they have options for all meals of the day - it has a very complete vegetarian menu. Among the options are the agnolotti with caramelized onions and pecorino cheese and the gnocchi with broccoli and grilled carrots.
5. Joie by Dozo, Singapore
The restaurant is located on the terrace of the Orchard Central shopping mall. For there, the proposal is to serve modern dishes without meat. All of them are given special care in the assembly, and arrive looking like true works of art. The menu is divided into "hot" and "cold" dishes. Among the hot options is the zucchini tower, served with cream cheese, truffled mayonnaise and beets.
6. D.O.M, São Paulo (Brazil)
Chef Alex Atala's restaurant serves seasonally the menu of the vegetable kingdom. In the last edition, he presented, among the main dishes, roasted black rice with green vegetables and pupunha palm heart fetuccine in butter. The establishment, located in the Jardins, in São Paulo, has two stars in the Michelin guide.
